Hav-Pilav (Roast chicken w/rice-meat stuffing)

Serves 6


1 whole roasting chicken ½ cup long grained rice ½ lb ground lamb ¼ cup orzo 1 cup chicken broth, heated 1 oz. butter 1 tbsp. olive oil ⅛ cup pine nuts 1½ tsp. ground allspice 1 tsp.salt 1 tsp. ground black pepper


1. Melt butter in a stockpot, and add orzo. 2. Sauté orzo until slightly browned. 3. Add rice and stir for a few minutes. 4. Add broth and stir, then let simmer until broth is fully absorbed. 5. Combine meat, pine nuts, allspice, salt and pepper in a pan. 6. Sauté mixture until meat is browned. 7. Add meat to the rice, and mix well. 8. Stuff rice/meat mixture into chicken. 9. Place chicken in a roasting pan and cook in 375° oven for 1 hour.

Serve with additional rice pilav, if desired. (See recipe) A glass of tan goes very well with this meal.
